If you're going scout/sentinal and not boosting your stats (I'm not even sure if this is possible, but, meh) Then, yes, 2 meleers would be your best bet. Be warned that you're gonna be royally screwed against enemies with High Defense seeing as how your Force Powers are pretty much worthless. Also, the Max Dexterity Bonus restricts your Dexterity Bonus up to the max listed in the Armor Description i.e. - If your Max Dexterity Bonus is +2, then even if you have 150 Dexterity, it'll still funciton in battle as if you had 14 Dexterity, so using Armor really sucks for people with blasters. On a side note, you suffer a huge defense penalty if you're using a blaster and are engaged in melee combat, so using Robes/Light Armor is risky.

If you want my pure opinion, scrap the Ranged Idea, and pick either Guardian or Consular. Sentinal is Okay, but you can't deliver the kind of destruction a Guardian can, nor use Force Powers as well as a Consular.
